This is by far my favorite creation! Although I am posting dairy ingredients, feel free to substitute with vegan alternatives. Add or omit veggies to your liking. This is my favorite combination of tastes, but the choices are endless on this one! Warning: this sandwich lives up to its name!
The Messy Veggie
Serves one
Ingredients
Romaine lettuce chopped
1 Tomato sliced
1Avocado sliced
1 Red onion sliced
1/2 cucumber sliced
Handful of sprouts
4 slices provel cheese (white American cheese if you are not from St. Louis) (optional)
2 slices of 9 grain bread
Dill sauce (recipe follows)
Method
Slather dill sauce on both slices of 9 grain bread. Layer cheese, if using, lettuce, tomato, avocado, onion, cucumber, and sprouts on top. Top with remaining cheese and finish off this concoction with other piece of bread. Serve with chips and a pickle. This one can't get any easier!
Dill sauce
1/2 c. Sour cream
2 Tbsp mayonnaise
A handful of chopped red onion
1 tsp. season salt or to taste
1/8 c. Dried dill or to taste (you want it dilly!)
Mix all the ingredients together and chill for at least for 3 hours. This sauce will stay fresh in fridge for two days in a sealed container, and leftovers are delicious as a veggie dip.

The Happy Heffer is a space for fun cooking , creative ideas, and recipe sharing for those of us living a vegetarian/vegan life. I have been a vegetarian for 20+ years and am now raising a vegetarian family. I have recently learned that experimenting with food is much more rewarding than just simply following a recipe, so I welcome ideas and overhauls of anything I post. Some of the recipes are my own, others are my favorites published by others, and some may be yours! I hope you enjoy my ideas, and may you have fun living a vegetarian/vegan life that will keep the heifer and her friends happy!
